Palma Rabbit -- Hahndorf Fruit & Veg Market

PALMA RABBIT STEW

4 pieces of Hahndorf Market Rabbit

1 cup of flour

2 tins Sienna diced tomatoes

4 sticks rosemary

2 cups of red wine of your choice

1 whole red capsicum

2 brown onions

3 cloves of garlic

1 tablespoon of salt

1 teaspoon of black pepper

¼ cup of olive oil

 

Preheat oven to 180 degrees. Dip whole pieces of rabbit into flour. Use half of the olive oil and put it in the frying pan on high heat. Brown the rabbit pieces. Once brown, place into an oven safe dish (with a lid) with all other ingredients making sure you mix it well. Put the lid on and pop it in the oven and bake for 3 hours. Serves 4.

 

SPINACH AND POTATO MASH

1 bunch of spinach

4 large dirty potatoes (Cooliban or Sebago)

4 cloves of garlic - chopped

½ cup of olive oil

Salt to your liking

 

Wash and peel all the veg. Boil potatoes until they are soft and separately boil the spinach until soft. Put them in a colander and make sure they are well drained. In a frying pan, place oil and garlic. Brown garlic in oil and add potatoes and spinach and salt. Mash them and fry them at the same time and allow up to 5 minutes cooking time stirring regularly.
