Italian Flatbread Crackers and Sweet Potato Dip -- All Seasons Wholefoods
Italian Flatbread Crackers
1½ cups of all-purpose or gluten-free flour
2 tsp of Italian herbs
1 tsp ground pepper
1 tsp salt
1 tsp sugar
2 tsp olive oil
½ cup of water
Pulse flour, herbs, pepper, salt, sugar and olive oil in a food processor. Add the water until the ingredients start to stick together to form a dough. Roll out to shape, let rest for 10 mins. If it shrinks back, roll out and rest. Bake on a non-stick flat cook tray at 220 c for 5 to 10 mins. Check after 5 mins to make sure the edges are not drying out. After cooked, rest for 1-2 hours, then break into pieces.
Sweet Potato Dip
1 large sweet potato
1 tub of cream cheese (or vegan cream cheese)
Boil sweet potato until soft and place in a food processor when cold. Add cream cheese and blend together. Serve with crackers and any fresh raw produce.
