Bread and Butter Pudding (Gluten and Dairy Free) -- Farmhouse Pantry

  • 6 to 8 slices of Farmhouse Pantry sorghum bread
  • 25g dairy-free spread
  • handful of sundried sultanas
  • handful of almonds
  • 700ml almond milk
  • 4 eggs
  • 75g honey
  • Farmhouse Pantry’s dairy-free vanilla bean ice cream to serve

Preheat oven to 160C. Line an 8cm-deep, 19cm x 26cm (6-cup capacity) baking dish with baking paper. In a bowl mix together the almond milk, eggs and honey. Spread one side of each slice of bread with dairy free spread then slice in half. Arrange bread in rows in the base of the dish. Sprinkle over dried fruit and nuts then another layer of bread and pour the almond milk mixture over and sprinkle with a few more nuts. Allow to stand for about half an hour or more to soak. Bake for 30 to 35 minutes or until golden and set and let stand for 10 minutes before serving with a scoop of ice cream.
